Instructions
- Make the Date Filling – In a saucepan, combine chopped dates, water, cinnamon, and honey. Cook over medium heat, stirring frequently, until the dates soften into a thick paste (about 5 minutes). Set aside to cool.
- Prepare the Dough – In a bowl, whisk together flour, baking soda, salt, and cinnamon. In another bowl, beat butter and brown sugar until creamy. Add egg and vanilla extract, mixing well. Gradually stir in the dry ingredients until a dough forms.
- Assemble the Cookies – Preheat the oven to 350°F (175°C). Roll the dough into 1-inch balls, flatten slightly, and place on a lined baking sheet. Spoon a small amount of date filling onto half the cookies, then top with another piece of flattened dough. Gently seal the edges.
- Bake – Bake for 10–12 minutes, until lightly golden brown. Let cool for 5 minutes, then transfer to a wire rack.
