Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Wash the zucchini, cut them in half lengthwise, and scoop out the center to create a hollow space. Arrange them on a baking sheet.
- Sauté the Vegetables: Heat olive oil in a pan over medium heat. Add spring onions and cook for 3-4 minutes until soft. Stir in garlic, oregano, salt, and black pepper, cooking for another minute. Remove from heat.
- Prepare the Filling: In a bowl, mix ricotta, Parmesan, sun-dried tomatoes, and breadcrumbs. Add the sautéed onion mixture and stir until well combined.
