Ingredients

Scale
  • 2 pounds shredded potatoes (hashbrown style, fresh or homemade)
  • 1 10.5-ounce can cream of chicken soup
  • 2 cups sour cream
  • 2 ½ cups shredded cheddar cheese (divided)
  • ½ cup unsalted butter (melted)
  • 1/3 cup finely diced onions
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper

Instructions

  1. Preheat and Prepare : Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. Set it aside for later use.
  2. Combine Ingredients : In a large mixing bowl, combine shredded potatoes, cream of chicken soup, sour cream, 2 cups of cheddar cheese, melted butter, diced onions, salt, and pepper.
  3. Assemble the Casserole : Pour the potato mixture into the prepared baking dish, spreading it out into an even layer. Sprinkle the remaining ½ cup of cheddar cheese over the top for an extra cheesy crust.
  4. Bake to Perfection : Place the casserole in the preheated oven and bake for 45–50 minutes, or until the top is golden brown and crispy.

Notes

  • For a vegetarian version, substitute the cream of chicken soup with cream of mushroom or cream of celery soup.
  • For extra crunch, top with breadcrumbs, crushed crackers, or French-fried onions before baking.
  • Make it heartier by adding cooked bacon bits, diced ham, or shredded rotisserie chicken to the mix.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
