- 1 bay leaf
- 1 teaspoon dried parsley

- ½ teaspoon garlic powder
- 1¾ cups low-sodium chicken broth
- 1 carrot, peeled and sliced
- 1 onion, chopped
- 10.5 ounces cream of chicken soup (1 can)
- ½ cup frozen peas
- 16.3 ounces refrigerated biscuit dough (8 large biscuits)
- Chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the Chicken: Season chicken thighs with salt and pepper. Place them in the bottom of your crockpot.
- Add Seasonings and Liquid: Sprinkle the bay leaf, parsley, rosemary, thyme, and garlic powder over the chicken. Pour in the chicken broth.
- Add Vegetables: Add the carrot, onion, and cream of chicken soup. Stir gently to combine the top layer.
- Slow Cook: Cover and cook on LOW for 6 hours or HIGH for 3 hours.
- Shred the Chicken: Remove the chicken and shred it into bite-sized pieces using two forks. Return the shredded chicken to the crockpot.
- Add Dumplings: Tear or cut the biscuit dough into small pieces (1 inch each) and place them evenly on top of the chicken mixture. Cook on HIGH for 1–2 hours, or until the biscuits are cooked through and fluffy.
- Add Peas: Stir in the frozen peas during the last 30 minutes of cooking.
- Serve: Garnish with chopped parsley, if desired, and serve hot.

- For homemade dumplings, mix flour, baking powder, milk, and butter to create a scratch-made option.
- To thicken the broth, whisk 1 tablespoon cornstarch with 2 tablespoons water and stir it into the crockpot in the final hour.
- Feel free to add additional vegetables like celery, green beans, or mushrooms for extra nutrition.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of chicken broth to prevent drying out.
