Ingredients

Scale
  • 1 pound ground chuck
  • 1 medium onion, diced
  • 24 ounces pasta sauce
  • 1 can (14.5 ounces) beef broth
  • 1 cup water
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 can (10 ounces) Rotel tomatoes (undrained)
  • 2 tablespoons ketchup
  • 2 russet potatoes, peeled and cubed
  • 1 package frozen mixed vegetables
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon crushed red pepper flakes (adjust to taste)
  • ½ teaspoon black pepper

Instructions

  • Cook the Ground Beef and Onion
    • Heat a large nonstick skillet over medium heat.
    • Add the ground chuck and diced onion. Cook, crumbling the beef, until browned and no longer pink.
    • Drain the grease and transfer the beef-onion mixture to your crockpot.
  • Add the Remaining Ingredients
    • Layer in the pasta sauce, beef broth, water, diced tomatoes, Rotel tomatoes, ketchup, cubed potatoes, frozen mixed vegetables, Worcestershire sauce, Italian seasoning, salt, crushed red pepper flakes, and black pepper.
    • Stir well to combine.
  • Cook in the Crockpot
    • Cover the crockpot with its lid and cook on LOW for 6–8 hours or HIGH for 5–6 hours.
  • Check and Adjust
    • Before serving, taste and adjust seasoning with additional salt or pepper if needed.
  • Serve Hot
    • Ladle the soup into bowls and serve with crusty bread, crackers, or a fresh green salad.

Notes

  • Make It Milder: Reduce or omit the crushed red pepper flakes and use mild Rotel tomatoes.
  • Storage: Refrigerate leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
  • Reheating: Reheat on the stovetop over medium heat or in the microwave in 1–2 minute intervals, stirring in between.
