  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • Freshly crushed black pepper, to taste
  • 1 large egg, whisked
  • ½ teaspoon baking powder
  • ½ cup (90 g) plain flour

Instructions

1. Prepare the Zucchini

  1. Place the grated zucchini in a colander and sprinkle with sea salt flakes.
  2. Let it sit for 10 minutes to draw out excess moisture.
  3. Squeeze out as much liquid as possible using your hands or a clean cloth.

2. Mix the Ingredients

  1. In a large mixing bowl, combine the drained zucchini, minced garlic, spring onions, and grated halloumi.
  2. Add the dried oregano, thyme, basil, smoked paprika, and black pepper. Mix well to evenly distribute the flavors.

3. Add the Egg and Flour

  1. Stir in the whisked egg and baking powder, ensuring everything is well coated.
  2. Gradually add the plain flour, mixing continuously until the batter holds together.

4. Heat the Oil

  1. Heat a large frying pan over medium-high heat and add olive oil.
  2. Make sure the oil is hot but not smoking before frying the fritters.

5. Shape and Fry the Fritters

  1. Form the zucchini mixture into small patties using your hands or a spoon.
  2. Place the fritters in the hot pan, being careful not to overcrowd them.
  3. Fry for 3-4 minutes per side, or until golden brown and crispy.
