Ingredients

Scale
  • 2 medium zucchinis, grated
  • ½ cup grated Parmesan cheese
  • ½ cup all-purpose flour
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  • Prepare the Zucchini

    • Grate the zucchinis using a box grater or food processor.
    • Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  • Mix the Ingredients

    • In a large bowl, combine the shredded zucchini, Parmesan, minced garlic, beaten egg, basil, and oregano.
    • Stir until everything is well mixed.
    • Add the all-purpose flour and mix until fully combined.
    • Season with salt and black pepper to taste.
  • Form the Bites

    • Scoop small portions of the mixture and shape them into bite-sized patties or balls.
    • If the mixture is too sticky, add a little more flour.
  • Cook the Bites

    • Heat the olive oil in a large skillet over medium heat.
    • Once the oil is hot, add the zucchini bites in batches.
    • Cook for 2-3 minutes per side, until golden brown and crispy.
    • Transfer to a paper towel-lined plate to drain excess oil.
  • Serve and Enjoy

    • Serve warm, garnished with extra Parmesan if desired.
    • Enjoy with your favorite dipping sauce like marinara, ranch, or tzatziki.

Notes

  • For a baked version: Place the bites on a parchment-lined baking sheet and bake at 400°F for 15-20 minutes, flipping halfway through.
  • For an air-fried version: Cook at 375°F for 10-12 minutes, flipping halfway through.
  • Make it gluten-free: Swap all-purpose flour for almond flour or gluten-free breadcrumbs.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat in the oven at 350°F for 5-7 minutes or in the air fryer at 375°F for 3-5 minutes to maintain crispiness.
