  • 1 cup sweet potatoes, cooked and mashed
  • 1/2 cup corn kernels
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced

  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste

Other Ingredients:

  • 10 small corn tortillas
  • 2 tbsp olive oil

Optional Toppings:

  • Guacamole
  • Salsa
  • Vegan sour cream
  • Fresh cilantro

Instructions

 

  1. Prepare the Filling:
    • Heat 1 tbsp olive oil in a pan over medium heat.
    • Sauté chopped onion and minced garlic for 3-4 minutes until fragrant and translucent.
    • Stir in black beans, mashed sweet potatoes, and corn.
    • Add chili powder, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes.
    • Remove from heat and let the filling cool slightly.
  2. Assemble the Taquitos:
    • Warm the corn tortillas slightly to make them pliable.
    • Spoon the filling onto each tortilla and roll tightly.
    • Place them seam-side down to keep them from unrolling.
  3. Crisp Up the Taquitos:
    • Preheat the oven to 400°F (200°C) or heat a pan with 1 tbsp olive oil over medium heat.
    • Arrange taquitos on a baking sheet, seam-side down.
    • Brush or spray with a little olive oil for extra crispiness.
    • Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
    • Alternatively, cook in a pan for 2-3 minutes per side until crispy.
