Filling Ingredients:
- 1 cup black beans, cooked
- 1 cup sweet potatoes, cooked and mashed
- 1/2 cup corn kernels
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper, to taste

- 10 small corn tortillas
- 2 tbsp olive oil

Instructions
- Prepare the Filling:
- Heat 1 tbsp olive oil in a pan over medium heat.
- Sauté chopped onion and minced garlic for 3-4 minutes until fragrant and translucent.
- Stir in black beans, mashed sweet potatoes, and corn.
- Add chili powder, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes.
- Remove from heat and let the filling cool slightly.
- Assemble the Taquitos:
- Warm the corn tortillas slightly to make them pliable.
- Spoon the filling onto each tortilla and roll tightly.
- Place them seam-side down to keep them from unrolling.
- Crisp Up the Taquitos:
- Preheat the oven to 400°F (200°C) or heat a pan with 1 tbsp olive oil over medium heat.
- Arrange taquitos on a baking sheet, seam-side down.
- Brush or spray with a little olive oil for extra crispiness.
- Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
- Alternatively, cook in a pan for 2-3 minutes per side until crispy.
