For the Dough:

  • 300 g all-purpose flour
  • 125 g room temperature water
  • 50 g hot water
  • 1/2 teaspoon salt
  • 1 tablespoon oil

For the Filling:

  • 1 can (15 oz chickpeas, drained and rinsed)
  • 2 1/2 tablespoons soy sauce
  • 1 teaspoon sugar
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of Chinese 5-spice powder
  • 6 stalks green onion (chopped)
  • Raw white sesame seeds (optional)
  • Oil for brushing and cooking

Instructions

  1. Make the Dough : In a large mixing bowl, combine the all-purpose flour and salt. Add the hot water and mix gently. Gradually add the room temperature water and knead the mixture into a smooth dough. Add 1 tablespoon of oil and knead for another 3–5 minutes.
  2. Prepare the Filling : In a bowl, use a fork or potato masher to mash the chickpeas until they reach a chunky, paste-like consistency. Stir in soy sauce, sugar, salt, black pepper, and Chinese 5-spice powder. Mix well. Add the chopped green onions and mix until evenly distributed. Set aside.
  3. Assemble the Flatbreads : Divide the rested dough into equal portions (about 4–6 pieces, depending on desired size). Scoop a hearty portion of the chickpea mixture and place it in the center of the dough circle. Fold the edges of the dough over the filling to seal it, then flatten it gently with a rolling pin to form a flatbread. Brush both sides with oil and sprinkle sesame seeds on top if desired.
  4. Cook the Flatbreads : Heat a skillet or nonstick pan over medium heat. Add a small amount of oil. Cook the flatbreads for 3–4 minutes on each side, or until golden brown and crispy.
  5. Serve : Serve the crispy flatbreads warm with a dipping sauce of your choice, or enjoy them as they are!
