Crispy Shrimp Croquettes are delicious seafood bites made with finely chopped shrimp, breadcrumbs, and Parmesan cheese, perfect for a snack or appetizer.

- 1 pound raw shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/4 cup milk
- Vegetable oil for frying
Instructions
- In a food processor, pulse the shrimp until finely chopped but not pureed. Transfer to a mixing bowl.
- Add the flour, breadcrumbs, Parmesan cheese, parsley, garlic, paprika, salt, and pepper to the bowl with the shrimp. Mix until well combined.
- In a separate bowl, whisk together the eggs and milk.
- Form the shrimp mixture into small balls or patties, about 1 inch in diameter.
- Dip each ball into the egg mixture, then roll in additional breadcrumbs to coat.
- Heat about 2 inches of vegetable oil in a deep skillet over medium heat.
- Fry the croquettes in batches for 3-4 minutes or until golden brown, turning occasionally.
- Remove with a slotted spoon and drain on paper towels.
Notes
- For a spicy kick, add a teaspoon of cayenne pepper to the shrimp mixture.
- Substitute crab or lobster for shrimp for a different seafood flavor.
