Description

Crispy Shrimp Croquettes are delicious seafood bites made with finely chopped shrimp, breadcrumbs, and Parmesan cheese, perfect for a snack or appetizer.


Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil for frying


Instructions

  1. In a food processor, pulse the shrimp until finely chopped but not pureed. Transfer to a mixing bowl.
  2. Add the flour, breadcrumbs, Parmesan cheese, parsley, garlic, paprika, salt, and pepper to the bowl with the shrimp. Mix until well combined.
  3. In a separate bowl, whisk together the eggs and milk.
  4. Form the shrimp mixture into small balls or patties, about 1 inch in diameter.
  5. Dip each ball into the egg mixture, then roll in additional breadcrumbs to coat.
  6. Heat about 2 inches of vegetable oil in a deep skillet over medium heat.
  7. Fry the croquettes in batches for 3-4 minutes or until golden brown, turning occasionally.
  8. Remove with a slotted spoon and drain on paper towels.

Notes

  • For a spicy kick, add a teaspoon of cayenne pepper to the shrimp mixture.
  • Substitute crab or lobster for shrimp for a different seafood flavor.
