Ingredients

Scale
  • 4 potatoes, peeled and diced
  • 2 eggs
  • 1 spring onion, finely chopped
  • Vegetable oil (for frying)
  • Salt to taste
  • Black pepper to taste

Optional Additions:

  • Shredded cheese (cheddar or Parmesan)
  • Garlic powder or paprika for extra flavor
  • Hot sauce or ketchup for serving

Instructions

  • Prepare the Potatoes – Peel and dice the potatoes into small, even-sized cubes for even cooking.
  • Cook the Potatoes – Heat vegetable oil in a large skillet over medium heat. Add the potatoes in a single layer and season with salt and black pepper. Stir occasionally and cook for 10-12 minutes until golden brown and crispy.
  • Add the Eggs – Push the potatoes to one side of the skillet. Crack the eggs into the empty space and cook to your preference:
    • Sunny-side up – Let cook until whites are set.
    • Over-easy – Flip and cook for another 30 seconds.
    • Scrambled – Stir the eggs into the potatoes.
  • Garnish & Serve – Sprinkle with chopped spring onion, and enjoy hot with optional cheese or hot sauce.

Notes

  • Use Yukon Gold or Russet potatoes for the best crispiness.
  • Don’t overcrowd the pan to ensure even browning.
  • Season after frying for a crispier texture.
  • Customize with veggies or spices for extra flavor.
