  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup all-purpose flour

  • 1 egg, beaten
  • 2 tablespoons chopped fresh dill (or 1 tablespoon dried dill)
  • 2 cloves garlic, minced

Instructions

  • Prep the Zucchini

    • Place grated zucchini in a colander over a bowl.
    • Sprinkle with 1 teaspoon of salt and let sit for 10 minutes to draw out moisture.
    • Squeeze out excess liquid using a clean kitchen towel or paper towel.
  • Make the Fritter Mixture

    • In a large mixing bowl, combine zucchini, mozzarella, Parmesan, flour, breadcrumbs, egg, dill, garlic, and black pepper.
    • Mix well until the batter is evenly combined.
  • Form and Fry the Fritters

    • Heat olive oil in a large skillet over medium heat.
    • Scoop tablespoons of batter into the skillet and press slightly to form patties.
