  • ¼ cup panko bread crumbs, plus 2 tbsp extra for coating
  • ½ cup grated Parmesan cheese
  • ½ cup chopped red onion
  • 3 tsp minced garlic
  • 2 tsp dried parsley
  • ¼ tsp onion powder
  • ¼ tsp dried dill
  • ⅛ tsp crushed red pepper
  • ½ tsp celery seeds
  • 2 tsp black pepper
  • 1¼ tsp salt
  • 3 tbsp mayonnaise
  • 2 tsp lemon zest
  • 3 tsp lemon juice
  • 3 eggs, lightly beaten

For Cooking the Patties

  • ¼½ cup panko bread crumbs (for coating)
  • 6 tbsp vegetable oil (adjust as necessary)

Instructions

  • Prepare the Tuna Mixture

    • In a large mixing bowl, combine the drained tuna, panko bread crumbs, Parmesan cheese, red onion, garlic, parsley, onion powder, dried dill, crushed red pepper, celery seeds, black pepper, and salt.
    • Add mayonnaise, lemon zest, lemon juice, and eggs.
    • Mix until well combined. The mixture should hold together when pressed.
  • Form the Patties

    • Shape the mixture into small 3-inch diameter patties.
    • Coat each patty with extra panko bread crumbs, pressing gently.
  • Cook the Patties

    • Heat 3 tbsp of vegetable oil in a large skillet over medium-high heat.
    • Fry the patties for 3-4 minutes per side, until golden brown and crispy.
    • Add more oil as needed for additional batches.
  • Drain and Serve

    • Transfer cooked patties to a paper towel-lined plate to drain excess oil.
