Description

Smoky, juicy, and packed with flavor, these crispy grilled shrimp are coated in a golden lemon garlic butter that’s both zesty and indulgent. Perfect for quick dinners or impressing guests, this recipe is simple, versatile, and delicious!

Ingredients

For the Lemon Garlic Butter:

  • Unsalted butter (6 tbsp)
  • Salt (¼ tsp)
  • Garlic (3 tsp, finely chopped)
  • Lemon juice (1 ½ tbsp, freshly squeezed)

For the Shrimp:

  • Large shrimp/prawns (1 lb / 500g, peeled and deveined)
  • Garlic powder (1 tsp)
  • Smoked paprika (1 tsp, or substitute with sweet paprika)
  • Cayenne pepper (¼ tsp, optional)
  • Lemon juice (1 tbsp, for grilling method)
  • Olive oil (2 tbsp)
  • Salt (½ tsp)
  • Black pepper (¼ tsp)

Optional Garnishes:

  • Chopped parsley
  • Grilled lemon halves
  • Crusty bread for dipping

Instructions

  1. Prepare the Grill:
    • Brush grill grates with oil to prevent sticking. Preheat the grill to high heat. If using small shrimp, thread them onto skewers (use two skewers per set for easy flipping).
  2. Make the Lemon Garlic Butter:
    • Melt butter in a small saucepan over medium-high heat.
    • Add garlic and salt, stirring until garlic is golden brown. Remove from heat and stir in lemon juice. Set aside.
  3. Season the Shrimp:
    • Pat shrimp dry with paper towels for better crispiness.
    • In a bowl, toss shrimp with garlic powder, smoked paprika, cayenne pepper, salt, pepper, and olive oil. Add lemon juice if grilling.
  4. Grill the Shrimp:
    • Place shrimp on the hot grill and cook for about 2 minutes per side. They should turn golden with slight char marks and become opaque in the center.
  5. Drizzle and Serve:
    • Transfer shrimp to a serving plate. Drizzle with the lemon garlic butter. Garnish with parsley and serve with grilled lemon halves.

Notes

  • Use fresh shrimp for the best flavor. If using frozen shrimp, thaw them completely and pat dry.
  • Avoid overcooking shrimp to keep them tender and juicy.
  • Adjust seasoning in the butter to your preference.
  • For a stovetop alternative, cook shrimp in a hot skillet over medium-high heat for 2 minutes per side.
