For the Carrots

  • 6 medium-large carrots (approx. 700g), peeled and cut into ¼-inch thick sticks or rounds
  • 2 tablespoons extra virgin olive oil
  • 2 large garlic cloves, finely minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin powder
  • ½ teaspoon chili powder or red pepper flakes (adjust to taste)
  • Pinch of sea salt

For the Topping

  • 70g freshly grated Parmesan cheese (Parmigiano Reggiano)
  • Handful of fresh parsley, finely chopped

Instructions

  • Preheat the Oven – Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to make cleanup easier.

  • Prepare the Carrots – Peel the carrots and cut them into evenly sized sticks or rounds. Keeping them uniform ensures even cooking.

  • Season the Carrots – In a large bowl, mix olive oil, minced garlic, smoked paprika, cumin, chili powder, and sea salt. Add the carrot pieces and toss until evenly coated.

  • Roast the Carrots – Arrange the seasoned carrots in a single layer on the baking sheet. Roast for 20-25 minutes, turning them halfway through, until they are tender and slightly caramelized.

  • Add the Parmesan – Remove the baking sheet from the oven and sprinkle the freshly grated Parmesan cheese over the carrots. Return to the oven for an additional 5 minutes, or until the cheese is melted and crispy.

  • Garnish and Serve – Transfer the roasted carrots to a serving dish, sprinkle with fresh parsley, and serve immediately.

Notes

  • For extra crispiness, broil the carrots for the last 2 minutes of baking.
  • Adjust the spice level by adding more or less chili powder.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
