  • 2 eggs (beaten)
  • 2 tablespoons flour
  • 5080 ml water (adjust for consistency)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

1. Prepare the Vegetables:

  • Grate the courgette and carrots into a large mixing bowl.
  • Squeeze out excess water from the courgette using a clean kitchen towel.
  • Add the finely chopped onion and pepper to the bowl.

2. Mix the Batter:

  • In a separate bowl, beat the eggs and pour them over the vegetables.
  • Sprinkle in the flour, salt, and pepper. Gradually add water while mixing to create a thick, cohesive batter. Adjust with additional flour or water as needed.

3. Form the Patties:

  • Heat a skillet with a thin layer of oil over medium heat.
  • Scoop 2–3 tablespoons of the vegetable mixture and shape it into a patty. Flatten slightly with a spoon.

4. Fry the Patties:

  • Fry each patty for 3–4 minutes on each side, or until golden brown and crispy.
  • Transfer the cooked patties to a plate lined with paper towels to drain excess oil.

5. Serve and Enjoy:

  • Serve warm with sour cream, yogurt dip, or a spicy aioli. Garnish with fresh parsley or dill for added flavor.
