  • 1 onion (shredded)
  • 4 baking potatoes (peeled and grated)
  • 2 tablespoons butter (divided)
  • 2 tablespoons oil (divided)
  • Salt and freshly ground black pepper (to taste)
  • 4 slices bacon (cooked and chopped (optional))

Instructions

  1. Prepare the Potatoes: Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and wring out as much moisture as possible. This step ensures a crispier Rösti. Mix the shredded onion with the grated potatoes in a large bowl.
  2. Season the Mixture: Season the potato and onion mixture with salt and freshly ground black pepper. Add chopped bacon at this stage if using.
  3. Cook the Onion: In a large skillet, warm 1 tablespoon of oil over medium heat. Add the shredded onion and cook for 1 to 2 minutes, or until it becomes tender and translucent.
  4. Form the Rösti: Divide the potato mixture into four portions. Form each portion into a flat pancake-like shape.
  5. Pan-Fry the Rösti: Heat 1 tablespoon of oil and 1 tablespoon of butter in the skillet over medium heat. Add two Rösti pancakes and cook for 5–7 minutes on each side, or until golden brown and crispy. Add more butter and oil as needed for the remaining portions. Repeat the process with the remaining Rösti pancakes.
  6. Serve: Take the Rösti out of the skillet and place them on a plate lined with paper towels to absorb any excess oil. Serve hot, garnished with chopped bacon (if used), and pair with sour cream, applesauce, or a side salad.

Notes

  • For extra crispiness, remove as much moisture as possible from the potatoes before cooking.
  • Use starchy potatoes (like Russets) for the best results.
  • For a cheesier Rösti, add ½ cup of grated Gruyère or Cheddar cheese.
