- Generous handful of baby spinach
- 150g (5.3 oz) cremini mushrooms, sliced
- 2 small yellow onions, finely chopped
- 1–2 teaspoons clarified butter (ghee) or more as needed
- 4 eggs

- Grated cheese for extra richness

Instructions
- Prepare the Potatoes – Slice the pre-cooked potatoes into rounds or cubes for optimal crispiness.
- Heat the Butter & Sauté the Onions – In a large skillet, heat 1-2 teaspoons of ghee over medium-high heat. Sauté the chopped onions until they become soft and translucent (about 3-4 minutes).
- Fry the Potatoes – Add the sliced or cubed potatoes, spread them in an even layer, and let them cook undisturbed for a few minutes. Stir occasionally and fry for 10-12 minutes until crispy and golden.
- Cook the Mushrooms – Add the sliced cremini mushrooms and cook for 4-5 minutes until softened and their moisture is released.
- Toss in the Spinach – Stir in a generous handful of baby spinach and cook for 2-3 minutes until wilted.
- Cook the Eggs – In a separate pan, melt a small amount of ghee and cook the eggs to your desired doneness—sunny-side up, over-easy, or scrambled.
- Assemble & Serve – Plate the crispy potatoes, mushrooms, and spinach, then top each serving with an egg. Season with salt, pepper, and any additional spices before serving hot.
