- ¼ cup 21 g panko or regular breadcrumbs
- ¼ teaspoon dried basil or 1–2 teaspoons of fresh basil
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Prep the Zucchini: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. Place the shredded zucchini in a clean kitchen towel or cheesecloth, then squeeze out as much liquid as possible.
- Mix the Ingredients: In a large mixing bowl, combine the zucchini, egg, cheese, breadcrumbs, basil, garlic powder, salt, and pepper. Mix well until the ingredients are evenly incorporated.
- Shape the Bites: Scoop small portions of the mixture and form them into 1-inch balls or flat discs, depending on your preference. Place them on the prepared baking sheet, leaving a bit of space between each piece.
- Bake: Bake for 15-18 minutes, flipping halfway through, until the bites are golden brown and crispy.
- Serve and Enjoy: Remove from the oven and let cool slightly before serving. Pair with your favorite dipping sauce, such as marinara or ranch, for added flavor.
