Description

Crispy Cheesy Broccoli Bites are the perfect blend of crispy, cheesy, and nutritious. Packed with tender broccoli and savory Parmesan, these bites are ideal for snacking, entertaining, or sneaking veggies into your meals. Quick to make and utterly irresistible, they’ll quickly become a household favorite!

Ingredients

Scale
  • 2 cups broccoli florets
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 cup panko (Japanese bread crumbs)
  • 2 ounces Parmesan cheese (grated)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Prepare the Broccoli: Steam or blanch the broccoli florets until tender (about 5 minutes). Let the broccoli cool slightly, then finely chop or mash it into small pieces.
  2. Mix the Ingredients: In a large mixing bowl, combine the chopped broccoli, eggs, salt, panko, and grated Parmesan cheese. Mix until the ingredients are evenly combined, forming a slightly sticky mixture.
  3. Shape the Bites: Scoop out small portions of the mixture and roll them into bite-sized balls or shape them into patties. Place the formed bites on a tray lined with parchment paper.
  4. Cook the Bites: Heat the olive oil in a non-stick skillet over medium heat. Add the broccoli bites to the skillet, making sure not to overcrowd the pan. Cook for 2–3 minutes per side or until golden brown and crispy.
  5. Serve: Remove the bites from the skillet and drain on paper towels to remove excess oil. Serve warm with your favorite dipping sauce, such as ranch or marinara.

Notes

  • Alternative Cooking Methods: Bake at 400°F (200°C) for 20–25 minutes or air fry at 375°F (190°C) for 10–12 minutes.
  • Substitutions: Swap Parmesan for Pecorino Romano or use a vegan cheese for a plant-based version.
  • Flavor Additions: Add garlic powder, chili flakes, or fresh herbs to enhance the flavor.
