  • 2 cloves garlic (minced)

Seasonings :

  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika (or smoked paprika for a smoky flavor)
  • ½ teaspoon ground coriander (optional)

For Frying :

  • 34 tablespoons fat for frying (ghee or oil of your choice)

Instructions

  1. Prepare the Vegetables: Shred the cabbage using a knife or food processor, grate the carrots, and finely chop the scallions (or onion). Combine all the vegetables in a large mixing bowl.
  2. Mix the Batter: Add the eggs, flour, minced garlic, salt, pepper, paprika, and coriander (if using) to the vegetable mixture. Mix thoroughly until all ingredients are well combined and coated in the egg-flour mixture.
  3. Heat the Pan: Heat a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of ghee or oil to coat the pan.
  4. Form the Fritters: Scoop about 2-3 tablespoons of the batter and flatten it into a pancake shape in the pan. Cook several fritters at a time, ensuring not to overcrowd the pan.
  5. Fry the Fritters: Cook each fritter for 3-4 minutes per side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning.
  6. Keep Warm: Place the cooked fritters on a paper towel-lined plate to remove excess oil. Keep warm while frying the remaining batches.
