Cabbage Fritter “Batter” :

- 3 large eggs
- 4–5 tablespoons flour (use gluten-free or grain-free options if needed)
- 2 cloves garlic (minced)
Seasonings :
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- ½ teaspoon paprika (or smoked paprika for a smoky flavor)
- ½ teaspoon ground coriander (optional)
For Frying :
- 3–4 tablespoons fat for frying (ghee or oil of your choice)
Instructions
- Prepare the Vegetables: Shred the cabbage using a knife or food processor, grate the carrots, and finely chop the scallions (or onion). Combine all the vegetables in a large mixing bowl.
- Mix the Batter: Add the eggs, flour, minced garlic, salt, pepper, paprika, and coriander (if using) to the vegetable mixture. Mix thoroughly until all ingredients are well combined and coated in the egg-flour mixture.
- Heat the Pan: Heat a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of ghee or oil to coat the pan.
- Form the Fritters: Scoop about 2-3 tablespoons of the batter and flatten it into a pancake shape in the pan. Cook several fritters at a time, ensuring not to overcrowd the pan.
- Fry the Fritters: Cook each fritter for 3-4 minutes per side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning.
- Keep Warm: Place the cooked fritters on a paper towel-lined plate to remove excess oil. Keep warm while frying the remaining batches.
- Serve: Serve the cabbage fritters hot with a dipping sauce of your choice, such as sour cream, yogurt, or a tangy garlic aioli.
