Ingredients

Scale

For the Chicken Marinade:

  • 4 pieces boneless, skinless chicken thighs or breasts
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt

For the Crispy Coating:

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

For the Butter Sauce:

  • 1/4 cup unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon honey
  • 1/4 teaspoon red chili flakes (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon soy sauce

Instructions

  • Marinate the Chicken
    • In a large bowl, combine buttermilk, garlic powder, paprika, salt, and pepper.
    • Add chicken, ensuring it’s fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  • Prepare the Crispy Coating
    • In a bowl, mix flour, cornstarch, paprika, onion powder, garlic powder, salt, and pepper.
    • Remove chicken from the marinade and let excess drip off. Coat each piece in the flour mixture, pressing firmly to adhere.
  • Fry the Chicken
    • Heat 2 inches of oil in a deep skillet to 350°F (175°C).
    • Fry chicken in batches for 5–6 minutes per side until golden brown and cooked through (internal temperature: 165°F or 75°C).
    • Place fried chicken on a wire rack or paper towels to drain excess oil.
  • Make the Butter Sauce
    • In a saucepan, melt butter over medium heat. Add minced garlic and chili flakes (if using), and sauté until fragrant.
    • Stir in honey, lemon juice, and soy sauce. Simmer for 2–3 minutes.
  • Combine and Serve
    • Drizzle butter sauce over crispy chicken or serve on the side for dipping.
    • Garnish with fresh parsley or lemon wedges for added flavor. Serve immediately and enjoy!

Notes

  • For lighter frying, use an air fryer or bake at 400°F (200°C) for 25–30 minutes, flipping halfway through.
  • Adjust the spice level in the butter sauce by adding more or less chili flakes.
  • Keep fried chicken warm in a 200°F (93°C) oven if cooking in batches.
