- 1/2 tsp garlic powder (or more to taste)
- 1/2 – 1 tsp salt (to taste)
- 1 tbsp olive oil
- Fresh cilantro or parsley, chopped
- Green onions, sliced (optional)
For the Taco Shells:
- Small flour or corn tortillas
- Olive oil (for brushing)

Instructions
Step 1: Prepare the Black Bean Filling
- In a food processor, blend the black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until well combined but slightly chunky.
- Stir in freshly chopped cilantro or parsley for a burst of freshness.
Step 2: Cook the Filling
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Add sliced green onions and a sprinkle of salt; cook until fragrant.
- Stir in the bean mixture and let it cook for ~5 minutes, flipping occasionally to develop a lightly seared crust. Add a splash of water or salsa if the mixture becomes too thick.
Step 3: Assemble the Tacos
- Brush or rub oil on one side of each tortilla.
- Spread a few tablespoons of the bean filling onto one half of each tortilla, adding cheese if desired.
- Fold the tortillas over and press gently so they stay in place.
