  • 1/21 tsp salt (to taste)
  • 1 tbsp olive oil
  • Fresh cilantro or parsley, chopped
  • Green onions, sliced (optional)

For the Taco Shells:

  • Small flour or corn tortillas
  • Olive oil (for brushing)

Instructions

Step 1: Prepare the Black Bean Filling

  1. In a food processor, blend the black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until well combined but slightly chunky.
  2. Stir in freshly chopped cilantro or parsley for a burst of freshness.

Step 2: Cook the Filling

  1. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Add sliced green onions and a sprinkle of salt; cook until fragrant.
  3. Stir in the bean mixture and let it cook for ~5 minutes, flipping occasionally to develop a lightly seared crust. Add a splash of water or salsa if the mixture becomes too thick.

Step 3: Assemble the Tacos

  1. Brush or rub oil on one side of each tortilla.
  2. Spread a few tablespoons of the bean filling onto one half of each tortilla, adding cheese if desired.
  3. Fold the tortillas over and press gently so they stay in place.

Step 4: Choose Your Cooking Method

Oven-Baked:
