Ingredients

  • 1 cup cooked chicken, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup ranch dressing
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional for garnish)


Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked pasta, shredded chicken, crumbled bacon, cherry tomatoes, cucumber, and red onion.
  3. In a separate bowl, whisk together the ranch dressing, mayonnaise, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the dressing mixture over the pasta salad and toss until everything is well coated.
  5. Gently fold in the shredded cheddar cheese.
  6. Chill the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
