A delicious and refreshing pasta salad featuring crispy bacon, tender chicken, and a creamy ranch dressing.

- 8 ounces rotini pasta
- 1 cup cooked chicken, shredded
- 6 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup ranch dressing
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (optional for garnish)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooked pasta, shredded chicken, crumbled bacon, cherry tomatoes, cucumber, and red onion.
- In a separate bowl, whisk together the ranch dressing, mayonnaise, garlic powder, onion powder, salt, and pepper until smooth.
- Pour the dressing mixture over the pasta salad and toss until everything is well coated.
- Gently fold in the shredded cheddar cheese.
- Chill the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled, garnished with fresh parsley if desired.
Notes
- For a lighter version, substitute Greek yogurt for mayonnaise.
- Add diced bell peppers or avocado for extra flavor and nutrition.
