Ingredients

Scale
  • Pickles of your choice (dill, bread & butter, or homemade), sliced ¼-inch thick
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • 2 large eggs
  • 2 tablespoons pickle juice
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • 1 cup panko bread crumbs
  • 2 tablespoons fresh dill, snipped (or 2 teaspoons dried dill)
  • Cooking spray

Instructions

  • Prepare the Pickles – Pat pickle slices dry with paper towels to remove excess moisture.
  • Season the Flour – In a shallow dish, mix flour, salt, garlic powder, and cayenne pepper.
  • Make the Egg Wash – In another dish, whisk eggs, pickle juice, salt, garlic powder, and cayenne pepper.
  • Prepare the Panko Coating – In a third dish, combine panko bread crumbs and dill. Mix well.
  • Coat the Pickles:
    • Dredge each pickle slice in the seasoned flour.
    • Dip into the egg wash, letting excess drip off.
    • Press into the panko mixture, ensuring a full coating.
  • Preheat the Air Fryer – Set to 400°F (200°C) and let preheat for 5 minutes.
  • Air-Fry the Pickles:
    • Arrange in a single layer in the air fryer basket.
    • Lightly spray with cooking spray.
    • Cook for 8-10 minutes, flipping halfway, until golden brown and crispy.
  • Serve Immediately – Enjoy with ranch, honey mustard, or spicy aioli!

Notes

  • For extra crispiness, double-coat the pickles by repeating the flour and egg wash steps.
  • Don’t overcrowd the air fryer, as this prevents even cooking.
  • Reheating tip: Air fry at 375°F (190°C) for 3-4 minutes to restore crispiness.
  • Make it spicy! Add more cayenne pepper or a pinch of chili powder for extra heat.
