Ingredients

Scale
  • 6 cups zucchini, sliced into ¼-inch half-moons (about 24 zucchini)
  • ¼ teaspoon salt
  • ⅓ cup heavy cream
  • 3 whole eggs
  • ¼ cup grated Parmesan cheese
  • 34 cloves garlic, minced
  • 1 teaspoon dried basil
  • ¼ teaspoon black pepper
  • ⅛ teaspoon ground nutmeg
  • 1½ cups shredded cheddar cheese (divided)
  • 2 tablespoons butter, sliced into small pieces
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat & Prepare Zucchini:

    • Preheat the oven to 375°F (190°C).
    • Toss the sliced zucchini with ¼ teaspoon salt and let sit for 10 minutes to remove excess moisture.
    • Pat dry with paper towels to prevent a watery casserole.
  2. Prepare the Custard Mixture:

    • In a large bowl, whisk together heavy cream, eggs, Parmesan cheese, garlic, basil, black pepper, and nutmeg until smooth.
  3. Assemble the Casserole:

    • Lightly grease a medium-sized baking dish.
    • Layer half of the zucchini at the bottom.
    • Sprinkle half of the shredded cheddar cheese over the zucchini.
    • Pour half of the custard mixture evenly over the layers.
    • Repeat with the remaining zucchini, cheese, and custard mixture.
    • Dot the top with butter slices for extra richness.
  4. Bake:

    • Place the dish in the oven and bake for 35-45 minutes, or until the top is golden brown and the casserole is set.
  5. Cool & Serve:

    • Let the casserole rest for 5-10 minutes before serving.
    • Garnish with fresh parsley and enjoy!

Notes

  • To prevent a soggy casserole, salt the zucchini and pat it dry before baking.
  • Use freshly grated cheese for the best melting and flavor.
  • Try different cheeses like mozzarella, Swiss, or Gouda for a unique twist.
  • For extra crunch, top with toasted breadcrumbs before baking.
