Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a rolling boil.
  • Add the pasta and cook until al dente (firm to the bite), following the package directions (usually 8-10 minutes).
  • Reserve ¼ cup of the pasta water and drain the rest. Set the pasta aside.

Step 2: Sauté the Onion

  • In a large skillet, heat a small amount of vegetable oil over medium heat.
  • Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 3: Cook the Salmon

  • Add the butter to the skillet. Once melted, add the salmon pieces.
  • Cook the salmon for 2-3 minutes on each side until it’s just cooked through and lightly golden. Avoid overcooking to keep the salmon tender and flaky.

Step 4: Deglaze with Wine

  • Pour in the dry white wine and use it to deglaze the pan, scraping up any browned bits.
  • Let the wine simmer for 2 minutes to reduce slightly and infuse the salmon with flavor.

Step 5: Add the Cream

  • Reduce the heat to low.
  • Stir in the heavy cream, combining it with the wine and salmon. Allow the mixture to simmer for 2-3 minutes until it thickens slightly.
