  • 1 onion, finely diced
  • 250g mushrooms, sliced
  • 1 head of broccoli, cut into florets
  • 3 garlic cloves, minced
  • 100ml dry white wine
  • 200ml cream
  • Peel of 1 lemon, grated
  • Salt and black pepper, to taste
  • 300g tagliolini pasta
  • 100g hard cheese, grated

For the Fresh Salad

  • 3 tomatoes, diced
  • ½ red onion, thinly sliced
  • 1 cucumber, sliced
  • A handful of fresh parsley, chopped
  • Olive oil, for drizzling

Instructions

  • Cook the Pasta

    • Boil a large pot of salted water and cook the tagliolini pasta until al dente.
    • Drain and set aside.
  • Sauté the Vegetables

    • Heat olive oil in a skillet over medium heat.
    • Sauté onions until soft and translucent.
    • Add mushrooms and cook until golden brown.
    • Stir in garlic and cook for another minute.
  • Add the Broccoli

    • Toss in broccoli florets and cook for 3-4 minutes until tender yet crisp.
  • Make the Cream Sauce

    • Pour in white wine and let it simmer for 2 minutes.
    • Stir in cream and lemon zest, then season with salt and black pepper.
  • Combine Everything

    • Add the cooked pasta and toss to coat.
    • Stir in grated cheese until melted and combined.
  • Prepare the Salad

    • Mix tomatoes, red onion, cucumber, and parsley in a bowl.
    • Drizzle with olive oil and toss gently.
