Description

This Creamy Garlic Parmesan Brussels Sprouts with Bacon recipe transforms humble Brussels sprouts into a rich, savory, and cheesy side dish. With crispy bacon, a luscious garlic cream sauce, and melty mozzarella and Parmesan, it’s a comforting and delicious addition to any meal. Perfect for holidays, family dinners, or a cozy night at home.

Ingredients

Scale
  • 10 ounces bacon, cut into strips
  • 2 tablespoons butter
  • 2 pounds Brussels sprouts, washed, trimmed, and halved
  • 1 pinch salt, to season
  • 1 pinch black pepper, to season
  • 5 cloves garlic, finely chopped
  • 1 ½ cups light cream or heavy cream (or thickened cream)
  • 1 ½ teaspoons cornstarch mixed with 1 tablespoon water (optional cornstarch slurry)
  • ⅓ cup mozzarella cheese, fresh shredded or grated
  • ¼ cup Parmesan cheese, fresh shredded or grated

Instructions

  • Cook the Bacon: Heat a large skillet over medium heat. Cook the bacon until crispy, about 5–7 minutes. Remove the bacon and place it on a plate lined with paper towels to drain.
  • Sauté the Brussels Sprouts: In the same skillet, melt the butter in the leftover bacon fat over medium heat. Add the Brussels sprouts, season with salt and pepper, and sauté for 5–7 minutes until they are lightly browned and softened.
  • Add the Garlic: Stir in the finely chopped garlic and cook for 1–2 minutes, just until fragrant.
  • Make the Cream Sauce: Reduce the heat to low. Pour in the cream and stir to combine with the garlic and Brussels sprouts. For a thicker sauce, mix the cornstarch slurry and add it to the pan, stirring until the sauce thickens slightly.
  • Add the Cheese: Stir in the mozzarella and Parmesan cheese. Cook on low heat, stirring gently, until the cheese is melted and the sauce is smooth.
  • Finish with Bacon: Add the crispy bacon back into the skillet and toss everything together until well combined.
  • Serve: Remove from heat and serve immediately. Garnish with extra Parmesan or bacon bits for an extra touch.

Notes

  • For Extra Crispiness: Roast the Brussels sprouts at 400°F (200°C) for 15 minutes before adding them to the skillet.
  • Keto-Friendly: Skip the cornstarch slurry and use only heavy cream.
  • Cheese Variations: Swap mozzarella for Gruyère or cheddar for a twist on flavor.
  • Storage Tips: Refrigerate leftovers in an airtight container for up to 3 days.
