Instructions
- Prepare the Coleslaw Base: In a large bowl, combine the coleslaw mix, dried cranberries, diced apple, sliced almonds, and green onions.
- Make the Dressing: In a small bowl, whisk together the sour cream (or yogurt), mayonnaise, honey, apple cider vinegar, and ground ginger (if using). Taste and adjust the seasoning with salt and pepper to your preference, adding more as necessary.
- Combine and Toss: Pour the dressing over the coleslaw mix and toss until everything is well-coated. Adjust seasoning if necessary.
- Chill and Serve: For best results, cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
Notes
- Apple Tips: Use a crisp apple variety like Honeycrisp, Gala, or Fuji for added sweetness and crunch.
- Prevent Browning: Toss diced apples in a splash of lemon juice before adding them to the coleslaw to keep them fresh and vibrant.
- Nut-Free Option: Replace almonds with sunflower or pumpkin seeds for a nut-free version.
- Make Ahead: This coleslaw tastes even better after chilling for a few hours, making it perfect for prepping ahead of time.
