  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1.5 lb chicken breast (about 1 large breast, cut into bite-sized pieces)
  • 4 garlic cloves (minced)
  • 1 cup heavy cream
  • 1 cup milk
  • 1¼ cups shredded cheese (Parmesan, Mozzarella, or Monterey Jack)
  • Salt and pepper to taste

Instructions

  1. Prepare the Pasta and Broccoli: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook it following the instructions on the package. Add the broccoli florets to the boiling pasta water during the last 2–3 minutes of cooking. Drain both the pasta and broccoli and set aside.
  2. Sauté the Chicken: In a spacious skillet, melt the butter and olive oil over medium heat. Introduce the chicken pieces, seasoning them with salt and pepper. Cook for 5–7 minutes or until the chicken is golden and fully cooked.
  3. Prepare the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and milk, stirring well to combine. Bring the mixture to a gentle simmer, then add 1 cup of shredded cheese, stirring until melted and smooth.
  4. Combine Ingredients: Return the cooked chicken to the skillet, stirring to coat in the Alfredo sauce. Add the drained pasta and broccoli, gently mixing everything until well combined.
  5. Serve: Sprinkle the remaining ¼ cup of cheese over the top before serving for an extra cheesy finish. Serve hot and enjoy!
