Ingredients
Scale
- 1 large head of cauliflower, cut into florets
- 2 cups cooked chicken breast, shredded
- 1 cup buffalo sauce (adjust to taste)
- ½ cup ranch dressing or blue cheese dressing
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 green onions, chopped
- Salt and pepper to taste
- Fresh parsley or chives, chopped, for garnish (optional)
Instructions
- Preheat the Oven – Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Prepare the Cauliflower – Steam or blanch the cauliflower florets until just tender, about 5-7 minutes. Drain well and pat dry to remove excess moisture.
- Mix the Ingredients – In a large bowl, combine the shredded chicken, buffalo sauce, and ranch or blue cheese dressing. Add the cauliflower florets and toss to coat evenly. Season with salt and pepper.
- Assemble the Casserole – Transfer the cauliflower and chicken mixture to the prepared baking dish. Sprinkle the shredded cheddar and mozzarella cheeses over the top.
- Bake – Place in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and the casserole is heated through.
- Garnish and Serve – Remove from the oven and sprinkle with chopped green onions and fresh parsley or chives if desired. Serve hot and enjoy the spicy, creamy goodness!
Notes
- Make It Extra Spicy – Add crushed red pepper flakes or extra buffalo sauce for more heat.
- Add Some Crunch – Top with crushed pork rinds or crispy fried onions before baking for extra texture.
- Storage – Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
- Keto-Friendly Option – Ensure the buffalo sauce and ranch dressing are low-carb for a fully keto dish.
