For the Coating:

  • 1 cup buttermilk
  • 1 egg
  • 1 cup all-purpose flour
  • 12 cups Panko bread crumbs
  • 2+ cups vegetable oil (for frying)

Instructions

  • Prepare the Filling
    • In a large mixing bowl, combine cream cheese, diced avocado, crumbled bacon, cheddar, and Pepper Jack cheese.
    • Stir in jalapeños, green onions, cilantro, red onions, garlic salt, Cajun seasoning, black pepper, and lime juice.
    • Mix until fully combined.
  • Shape the Bites
    • Roll the mixture into small bite-sized balls and place them on a parchment-lined baking sheet.
    • Freeze for 30-45 minutes until firm.
  • Prepare the Coating
    • In one bowl, whisk together buttermilk and egg.
    • Place flour in another bowl and Panko bread crumbs in a third bowl.
  • Coat the Bites
    • Roll each frozen bite in flour, then dip into the buttermilk and egg mixture.
    • Coat evenly with Panko bread crumbs, pressing lightly to ensure a crispy exterior.
  • Fry the Bites
    • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
