- 200 grams of fresh crab meat
- 200 ml of heavy cream
- 4 egg yolks
- 2 teaspoons of butter
- 1 teaspoon of lemon juice
- ¼ teaspoon of nutmeg
- Salt and pepper to taste
- 2 tablespoons of grated Parmesan cheese
- 2 tablespoons of breadcrumbs
- Chopped parsley for garnish
Instructions
- Preheat the oven to 160°C (325°F) and grease four small ramekins with butter.
- Sauté the crab: Melt butter in a pan over medium heat. Add the crab meat and cook for 2-3 minutes. Stir in lemon juice, nutmeg, salt, and pepper. Remove from heat and let cool slightly.
- Prepare the custard: In a bowl, whisk the egg yolks. Gradually whisk in the heavy cream until fully combined.
- Combine & fill: Gently fold the crab mixture into the custard. Divide the mixture evenly among the ramekins.
- Bake in a water bath: Place the ramekins in a baking dish and pour hot water around them, filling halfway up the sides. Bake for 25-30 minutes, or until the custard is just set.
- Cool & add topping: Let the brûlée cool to room temperature. Mix Parmesan cheese and breadcrumbs, then sprinkle over the tops.
- Caramelize the topping: Use a kitchen torch to create a golden crust. Alternatively, broil in the oven for 1-2 minutes.
- Garnish & serve: Sprinkle with chopped parsley and serve warm with crostini or crackers.

- Use fresh crab meat for the best flavor; canned or frozen crab can be used but should be drained and patted dry.
- No kitchen torch? Broil the brûlée for 1-2 minutes until golden brown.
- Make ahead: Prepare the custard up to 24 hours in advance, refrigerate, and brûlée the top just before serving.
