Instructions
- Preheat the oven to 400°F (200°C) and grease a 9-inch pie dish with cooking spray.
- In a large bowl, mix the shredded zucchini with salt and let it sit for 5-10 minutes. Squeeze out as much water as possible using a clean kitchen towel.
- Add the zucchini to a bowl and combine with eggs, cottage cheese, shredded cheese, herbs, flour, onion flakes, garlic powder, salt, and black pepper. Stir until fully combined.
- Pour the mixture into the prepared pie dish and bake for 45-50 minutes, or until the center is set and a toothpick comes out clean.
- Let the quiche cool on a wire rack for 2 hours before slicing. Serve warm or cold.
