Whether served warm or cold, this quiche is a versatile, wholesome, and satisfying dish for any time of the day.

Ingredients

  • Zucchini (shredded and drained)
  • Eggs
  • Cottage cheese (2% or 4%)
  • Cheddar, gouda, or havarti cheese (shredded)
  • Chopped fresh herbs (basil, parsley, dill, or chives)
  • Flour (gluten-free, all-purpose, or whole wheat)
  • Onion flakes or powder
  • Garlic powder
  • Salt
  • Black pepper
  • Cooking spray

Instructions

  • Preheat the oven to 400°F (200°C) and grease a 9-inch pie dish with cooking spray.
  • In a large bowl, mix the shredded zucchini with salt and let it sit for 5-10 minutes. Squeeze out as much water as possible using a clean kitchen towel.
  • Add the zucchini to a bowl and combine with eggs, cottage cheese, shredded cheese, herbs, flour, onion flakes, garlic powder, salt, and black pepper. Stir until fully combined.
  • Pour the mixture into the prepared pie dish and bake for 45-50 minutes, or until the center is set and a toothpick comes out clean.
  • Let the quiche cool on a wire rack for 2 hours before slicing. Serve warm or cold.
