Description

A healthy and protein-rich egg bake made withturkey sausage, cottage cheese, fresh spinach, and cherry tomatoes. Thisdelicious and filling dish is perfect for meal prepping or serving at breakfastor brunch.


Ingredients

  • 1 pound of ground breakfast sausage (I opted for turkey sausage)
  • 12 large eggs
  • 16 oz cottage cheese (~2 cups)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • Pinch of salt (optional)
  • 2 cups chopped fresh spinach
  • 1 cup quartered cherry tomatoes

Instructions

Step 1: Cook the Sausage

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground turkey sausage until browned and fully cooked through, breaking it into crumbles as it cooks.
  3. Once done, set aside and allow it to cool slightly.

Step 2: Prepare the Egg Mixture

  1. In a large mixing bowl, beat the 12 eggs until thoroughly combined.
  2. Add the cottage cheese, garlic powder, onion powder, black pepper, and salt (if using). Stir until well combined.

Step 3: Add the Vegetables and Sausage

  1. Fold in the chopped spinach, quartered cherry tomatoes, and the cooked sausage into the egg mixture.
  2. Mix everything together until the ingredients are evenly distributed.

Step 4: Bake the Egg Casserole

  1. Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. Pour the egg mixture into the prepared baking dish, ensuring it spreads out evenly.
  3. Bake in the preheated oven for 30-35 minutes, or until the eggs are fully set and the top is slightly golden.
  4. Take it out of the oven and allow it to rest for 5 to 10 minutes before slicing and serving.

Notes
