- 1 pound of ground breakfast sausage (I opted for turkey sausage)
- 12 large eggs
- 16 oz cottage cheese (~2 cups)
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp black pepper
- Pinch of salt (optional)
- 2 cups chopped fresh spinach
- 1 cup quartered cherry tomatoes
Instructions
Step 1: Cook the Sausage
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground turkey sausage until browned and fully cooked through, breaking it into crumbles as it cooks.
- Once done, set aside and allow it to cool slightly.
Step 2: Prepare the Egg Mixture
- In a large mixing bowl, beat the 12 eggs until thoroughly combined.
- Add the cottage cheese, garlic powder, onion powder, black pepper, and salt (if using). Stir until well combined.
Step 3: Add the Vegetables and Sausage
- Fold in the chopped spinach, quartered cherry tomatoes, and the cooked sausage into the egg mixture.
- Mix everything together until the ingredients are evenly distributed.
Step 4: Bake the Egg Casserole
- Lightly grease a 9×13-inch baking dish with cooking spray or butter.
- Pour the egg mixture into the prepared baking dish, ensuring it spreads out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are fully set and the top is slightly golden.
- Take it out of the oven and allow it to rest for 5 to 10 minutes before slicing and serving.
Notes
- Storage: Store leftovers in an airtight container in the fridge for up to 5 days.
- Freezing: Freeze individual portions for up to 2 months. Reheat in the oven or microwave.
- Customization: Swap the spinach for kale or bell peppers, or use chicken sausage instead of turkey.
