  • 1/2 cup blue cheese dressing

  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 box corn muffin mix

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners for easy removal.
  • Prepare the Batter: In a large mixing bowl, whisk together the eggs, melted butter, and blue cheese dressing until smooth and combined.
  • Add Seasoning and Cheese: Stir in the onion powder, garlic powder, Parmesan cheese, and shredded cheddar cheese. Mix well.
  • Add Spinach and Cornbread Mix: Fold in the drained spinach, ensuring it’s evenly distributed. Add the corn muffin mix and stir until the batter is just combined. Avoid overmixing.
