Ingredients

Scale

For the Muffins:

  • 2 cups bread, cubed
  • 2 eggs
  • 1 cup milk
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon melted butter

For the Cinnamon Sugar Topping

  • 2 tablespoons melted butter
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat the Oven:
    • Set oven to 350°F (175°C).
    • Grease a muffin tin or line it with paper liners.
  • Prepare the Bread Mixture:
  • Make the Custard:
    • In another bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and melted butter.
    • Pour the mixture over the bread cubes and stir gently to coat.
  • Fill the Muffin Tin:
    • Evenly divide the mixture into the muffin cups, pressing slightly to compact them.
  • Bake Until Golden:
    • Bake for 20–25 minutes, or until muffins are firm and golden brown.
  • Coat with Cinnamon Sugar Topping (Optional):
    • While muffins are still warm, brush the tops with melted butter.
    • In a small bowl, mix granulated sugar and cinnamon, then sprinkle over the muffins.
  • Serve and Enjoy:
    • Let muffins cool for a few minutes before serving.
    • Enjoy warm with maple syrup, whipped cream, or fresh fruit!

Notes

  • For best texture, use stale bread (French bread, brioche, or challah work best).

  • Storage: Keep in an airtight container for up to 5 days or freeze for up to 3 months.
  • Reheat: Warm in the oven at 300°F (150°C) for 5 minutes or in the microwave for 15 seconds.
