Ingredients
For the Cinnamon Bread:
- ¼ cup canola oil (or avocado oil)
- ¼ cup softened butter
- 1 cup granulated sugar
- 2 eggs (room temperature)
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup buttermilk (or ½ cup milk + ½ teaspoon white vinegar)
- ½ teaspoon ground cinnamon
- ½ teaspoon molasses
For the Cinnamon-Sugar Coating:
- ½ cup melted butter
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ½ teaspoon ground cinnamon
Instructions
- Preheat & Prep: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper. If making buttermilk from scratch, mix the milk and vinegar and let it sit for 5 minutes.
- Cream Butter & Sugar: In a large bowl, beat the softened butter, oil, and sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Combine Wet & Dry: Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Stir in molasses for extra richness. Do not overmix.
- Bake: Pour batter into the loaf pan and spread evenly. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
- Add Cinnamon-Sugar Coating: In a small bowl, mix the granulated sugar, brown sugar, and cinnamon. Brush melted butter over the warm loaf, then generously coat it with the cinnamon-sugar mixture.
- Set & Serve: Let the coating set for 15 minutes, then slice and enjoy!
Notes
- Use room temperature eggs to ensure a smooth batter.
- Don’t overmix the batter to keep the bread soft and fluffy.
- Fresh cinnamon enhances the flavor—don’t use stale spices!
- Storage: Keep at room temperature for 3-4 days, refrigerate for up to 1 week, or freeze for 3 months.
