Cake:

  • ¾ cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract

Filling:

  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • ½ cup caramel sauce

Topping:

  • ½ cup melted dark chocolate
  • Extra caramel sauce for drizzling

Instructions

  • Preheat the Oven & Prepare the Pan
    • Preheat oven to 350°F (175°C).
    • Line a 10×15-inch jelly roll pan with parchment paper and grease lightly.
  • Make the Chocolate Sponge Cake
    • In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
    • In another bowl, beat eggs and sugar with an electric mixer for 3-4 minutes until fluffy.
    • Mix in vanilla extract and gently fold in the dry ingredients.
  • Bake the Cake
    • Spread batter evenly into the prepared pan.
    • Bake for 10-12 minutes, or until the cake springs back when touched.
  • Roll the Cake While Warm
    • Invert the cake onto a clean kitchen towel dusted with cocoa powder.
    • Carefully peel off the parchment paper and roll the cake with the towel while warm.
    • Let it cool completely.
  • Prepare the Caramel Cream Filling
    • Whip heavy cream and powdered sugar until stiff peaks form.
    • Fold in the caramel sauce gently.
  • Assemble the Cake Roll
    • Unroll the cake and spread the caramel cream evenly.
    • Roll it back up (without the towel) and refrigerate for 30 minutes to set.
  • Add the Chocolate & Caramel Topping
    • Drizzle the cake with melted dark chocolate and extra caramel sauce.
    • Chill for another 15 minutes before slicing.
  • Serve & Enjoy!
    • Use a sharp knife to slice and serve chilled.
