For the Chimichurri:
- 1/3 cup parsley (finely chopped)
- 1/4 cup cilantro (finely chopped)
- 1 to 2 red chilis (depending on size, seeds and stem removed, finely chopped)
- 2 teaspoons dried oregano
- 2 tablespoons fresh garlic (finely minced)
- 3/4 cup olive oil
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon of freshly ground black pepper (adjust according to your preference.)
- 1 to 2 tablespoons of red wine vinegar (or substitute with fresh lemon or lime juice.)
For the Garlic Bread:
- 1 16-ounce French bread loaf
- 1/3 cup grated Parmesan cheese
- 1 to 2 cups of grated mozzarella cheese.
Instructions
Make the Chimichurri:
- In a bowl, combine the finely chopped parsley, cilantro, red chilies, dried oregano, and minced garlic.
- Stir in the olive oil, salt, black pepper, and vinegar (or lemon/lime juice).
- Taste and adjust seasoning as needed. Set the chimichurri aside to allow the flavors to meld while preparing the bread.
Prepare the Garlic Bread:
- Preheat your oven to 375°F (190°C).
- Slice the French bread loaf in half lengthwise to create two open halves.
- Spread a generous amount of the chimichurri sauce over the cut sides of the bread.
Add the Cheese:
- Sprinkle the grated Parmesan cheese evenly over both halves of the bread.
- Top with shredded mozzarella, covering the surface of the bread. Use 1 to 2 cups of mozzarella, depending on how cheesy you prefer your garlic bread.
Bake:
- Arrange the bread halves on a baking sheet and put them in the preheated oven for 10 to 12 minutes, or until the cheese has melted and is bubbling, and the edges of the bread turn golden brown and crispy.
