- 1–2 red chilies, finely chopped (seeds removed)
- 2 teaspoons dried oregano
- 2 tablespoons fresh garlic, minced
- ¾ cup olive oil
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1–2 tablespoons red vinegar or lemon/lime juice
For the Garlic Bread:
- 1 (16-ounce) French bread loaf
- ⅓ cup grated Parmesan cheese
- 1–2 cups shredded mozzarella cheese
Instructions
- Make the Chimichurri Sauce – In a bowl, mix together parsley, cilantro, red chilies, oregano, garlic, olive oil, salt, black pepper, and vinegar (or citrus juice). Let it sit for 5–10 minutes to allow the flavors to blend.
- Prepare the Bread – Preheat oven to 375°F (190°C). Slice the French bread in half lengthwise and place it on a baking sheet.
- Assemble the Garlic Bread – Spread the chimichurri sauce evenly over both halves of the bread. Sprinkle with grated Parmesan, then top with shredded mozzarella.
- Bake – Place the bread in the oven and bake for 10–12 minutes, or until the cheese is bubbly and golden. Broil for 1–2 minutes for extra crispiness.
- Slice & Serve – Let the bread cool slightly, then cut into slices and serve warm.
