For the Dough:
  • 100 ml warm milk
  • 100 ml warm water
  • 50 ml vegetable oil
  • 1 tbsp granulated sugar (20g)
  • 1 tbsp dry yeast (10g)
  • 1 tsp salt (8g)
  • 4 cups flour (480g)
For the Filling:
  • 1 red pepper, finely chopped
  • Β½ yellow pepper, finely chopped
  • 1 tomato, finely chopped
  • 1 green tomato, finely chopped
  • 6 green peppers, finely chopped
  • 4 green onions, finely chopped
  • 150g cheddar cheese, grated
For the Surface:
  • 1 egg yolk
  • 1 tbsp olive oil (10 ml)

Instructions

1. Prepare the Dough
  1. In a large mixing bowl, combine warm milk, warm water, and sugar. Sprinkle the dry yeast over the mixture and let it sit for 5-10 minutes, until frothy.
  2. Add vegetable oil and salt. Gradually add flour, mixing until a soft dough forms.
  3. Knead the dough for 8-10 minutes until smooth and elastic.
  4. Place in a lightly oiled bowl, cover with a cloth, and let it rise for 1 hour, or until doubled in size.
2. Prepare the Filling
  1. Finely chop red pepper, yellow pepper, green tomato, green peppers, green onions, and tomato.
  2. Mix the chopped vegetables with the grated cheddar cheese.
3. Assemble the Rolls
  1. Preheat your oven to 180Β°C (350Β°F).
  2. Punch down the dough and divide it into small equal portions.
  3. Roll each portion into a ball, then flatten into a small circle.
  4. Place a spoonful of filling in the center of each circle.
  5. Fold the edges over the filling and pinch to seal.
  6. Arrange the rolls on a parchment-lined baking sheet, cover, and let them rise for 15-20 minutes.
4. Bake the Rolls
  1. In a small bowl, whisk together the egg yolk and olive oil.
  2. Brush the mixture over the rolls for a golden crust.
  3. Bake for 20-25 minutes, or until golden brown.
