For the Dough:
- 100 ml warm milk
- 100 ml warm water
- 50 ml vegetable oil
- 1 tbsp granulated sugar (20g)
- 1 tbsp dry yeast (10g)
- 1 tsp salt (8g)
- 4 cups flour (480g)
For the Filling:
- 1 red pepper, finely chopped
- Β½ yellow pepper, finely chopped
- 1 tomato, finely chopped
- 1 green tomato, finely chopped
- 6 green peppers, finely chopped
- 4 green onions, finely chopped
- 150g cheddar cheese, grated
For the Surface:
- 1 egg yolk
- 1 tbsp olive oil (10 ml)
Instructions
1. Prepare the Dough
- In a large mixing bowl, combine warm milk, warm water, and sugar. Sprinkle the dry yeast over the mixture and let it sit for 5-10 minutes, until frothy.
- Add vegetable oil and salt. Gradually add flour, mixing until a soft dough forms.
- Knead the dough for 8-10 minutes until smooth and elastic.
- Place in a lightly oiled bowl, cover with a cloth, and let it rise for 1 hour, or until doubled in size.
2. Prepare the Filling
- Finely chop red pepper, yellow pepper, green tomato, green peppers, green onions, and tomato.
- Mix the chopped vegetables with the grated cheddar cheese.
3. Assemble the Rolls
- Preheat your oven to 180Β°C (350Β°F).
- Punch down the dough and divide it into small equal portions.
- Roll each portion into a ball, then flatten into a small circle.
- Place a spoonful of filling in the center of each circle.
- Fold the edges over the filling and pinch to seal.
- Arrange the rolls on a parchment-lined baking sheet, cover, and let them rise for 15-20 minutes.
4. Bake the Rolls
- In a small bowl, whisk together the egg yolk and olive oil.
- Brush the mixture over the rolls for a golden crust.
- Bake for 20-25 minutes, or until golden brown.
5. Serve & Enjoy!
- Let the rolls cool slightly before serving.
- Enjoy warm with your favorite dip, soup, or tea.
