  • Salt and pepper to taste
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • Cooking spray or oil for greasing

Instructions

    1. Prepare the Mixture: In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, chives, garlic powder, onion powder, salt, and pepper. Mix thoroughly until evenly combined.
    2. Add the Eggs: Beat the eggs and add them to the potato mixture. Stir well until you have a thick, sticky consistency. If the mixture feels too wet, incorporate a bit more breadcrumbs.
    3. For Frying: Heat about an inch of oil in a skillet over medium heat. Fry the puffs for 2–3 minutes per side or until golden brown. Drain on paper towels to remove excess oil.
    4. Shape the Puffs: Take about 1–2 tablespoons of the mixture and roll into small balls or oval-shaped puffs. Coat each puff lightly with breadcrumbs for an extra crispy finish.
    5. For Baking: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease lightly with cooking spray. Arrange the puffs on the sheet and bake for 15–20 minutes, flipping halfway through, until golden brown. 
    6. Serve: Let the puffs cool slightly before serving. Serve warm with sour cream, ranch dressing, or marinara sauce for dipping.

Notes

  • For best results, use thick mashed potatoes to ensure the puffs hold their shape.
