Start your day with these Cheesy Pesto Avocado Bacon Wraps, packed with creamy scrambled eggs, melted cheddar and fontina cheese, crispy bacon, and fresh avocado. Wrapped in a soft tortilla with a layer of basil pesto, this breakfast is quick, satisfying, and bursting with flavor. Whether you’re making it fresh or prepping ahead, this protein-packed, cheesy, and savory breakfast wrap is perfect for on-the-go mornings!

Ingredients

Scale
  • 8 large eggs
  • 2 teaspoons everything bagel spice
  • Kosher salt and black pepper (to taste)
  • ¾ cup shredded cheddar cheese
  • ¾ cup shredded fontina cheese
  • 3 tablespoons salted butter
  • 2 cups baby spinach
  • 4 large tortillas
  • 1 avocado (diced)
  • ½ cup basil pesto
  • 6 slices cooked bacon (crumbled)
  • 1 cup leftover French fries or roasted potatoes

Instructions

  1. Prepare the Eggs: In a bowl, whisk the eggs with everything bagel spice, a pinch of salt, and black pepper. Set aside.
  2. Cook the Eggs and Spinach: In a large skillet, melt the butter over medium heat. Add the whisked eggs and cook, stirring frequently until they begin to set. Add the cheddar and fontina cheeses, stirring until melted and creamy. Just before the eggs are fully cooked, fold in the baby spinach until wilted. Remove from heat.
  3. Prepare the Wraps: Place a tortilla flat on a clean surface. Spread about 2 tablespoons of basil pesto across the center. Spoon a portion of the cheesy scrambled eggs and spinach onto the tortilla. Top with diced avocado, crumbled bacon, and a few French fries or roasted potatoes for added texture.
  4. Wrap and Serve: Fold the sides of the tortilla over the filling, then roll it up tightly.
  5. Warm the Wraps (Optional): For an extra touch, heat each wrap in a skillet for 1-2 minutes on each side to crisp up the tortilla and melt the cheese further. Serve warm and enjoy!

Notes

  • For extra crunch, add pickled red onions or arugula before rolling the wrap.
  • To make it vegetarian, skip the bacon and add extra avocado or mushrooms.
  • If meal prepping, wrap tightly and store in the fridge for up to 3 days.
