Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1 large egg
  • 2 cups marinara sauce
  • 4 cups mashed potatoes (prepared, about 2 pounds of potatoes)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, garlic powder, onion powder, Italian seasoning, salt, pepper, breadcrumbs, and egg. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet and bake for 20 minutes, or until cooked through.
  4. In a 9×13 inch baking dish, spread half of the marinara sauce on the bottom. Arrange the cooked meatballs evenly over the sauce.
  5. Spoon the mashed potatoes over the meatballs, spreading them out evenly. Drizzle the remaining marinara sauce over the mashed potatoes.
  6. Sprinkle the mozzarella and Parmesan cheese on top of the mashed potatoes.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley if desired before serving.

  • For a spicier kick, add red pepper flakes to the meatball mixture.
  • Substitute ground turkey or chicken for a leaner option, and use cauliflower mash for a low-carb alternative.
