For the Potato Puffs:
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup milk
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Grease a mini muffin tin with cooking spray or butter to prevent sticking.
- Prepare the Mixture
- In a large bowl, mix together the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and green onions.
- Add salt and pepper to taste, then stir until fully combined.
- Fill the Muffin Tin
- Spoon the mixture into the mini muffin tin, filling each cup about ¾ full.
- Gently press down to shape the puffs.
- Bake Until Golden
- Bake for 20-25 minutes, or until the tops are golden and crispy.
- Remove from the oven and let the puffs cool for 5 minutes before removing them from the tin.
