Ingredients

For the Dough:

  • Whole milk
  • White sugar
  • Dry active yeast
  • Sea salt
  • Butter, melted
  • Large egg
  • All-purpose flour

For the Cheesy Egg Filling:

  • Hard-boiled eggs, diced
  • Mayonnaise
  • Mozzarella cheese, grated
  • Green onions, chopped
  • Fresh parsley, chopped

  • Garlic powder

  • Farmer’s cheese (Tvorog)

Instructions

Step 1: Preparing the Dough

  1. Warm the milk to 120-130°F and mix with sugar and yeast. Let it sit for 5 minutes until foamy.
  2. Stir in the melted butter, egg, and salt.
  3. Gradually add flour and knead until the dough is soft and elastic.
  4. Let the dough proof in a warm place for 1 to 1 ½ hours until doubled in size.

Step 2: Creating the Filling

  1. Boil eggs, then cool, peel, and dice them.
  2. Mix diced eggs with mayonnaise, mozzarella, farmer’s cheese, green onions, parsley, dill, and spices.

Step 3: Assembling the Piroshki

  1. Divide the proofed dough into 12-16 pieces.
  2. Roll each piece into a circle and place a spoonful of filling in the center.
  3. Pinch the edges together to seal, forming a compact hand pie.

Step 4: Cooking the Piroshki

For Frying:

  1. Heat oil to 275-300°F in a deep pan.
  2. Fry the piroshki seam side down, flipping when golden brown.
  3. Drain on a wire rack with paper towels underneath.

For Baking:

  1. Preheat oven to 350°F.
  2. Arrange piroshki on a parchment-lined baking sheet.
  3. Brush with beaten egg and bake for 28-35 minutes until golden brown.
