Ingredients
Scale
- 2 cups cauliflower rice (or a 10-ounce bag of frozen cauliflower rice, thawed)
- 1/4 cup onion (diced)
- 1 cup cheddar cheese (shredded)
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt (optional)
- 1 large egg (lightly beaten)
Instructions
- Prepare the Oven: Set your oven to 375°F (190°C) to preheat. Grease a muffin tin lightly or line it with silicone cups for easy removal.
- Prepare the Cauliflower Rice: If using fresh cauliflower rice, microwave it for 3-4 minutes until softened. Let it cool slightly, then use a clean kitchen towel to squeeze out excess moisture. If using frozen cauliflower rice, thaw completely and remove as much moisture as possible using the same method.
- Combine Ingredients: In a large mixing bowl, combine the cauliflower rice, diced onion, shredded cheddar cheese, Italian seasoning, and salt (if using). Add the beaten egg and mix well until all ingredients are fully combined.
- Portion the Mixture: Divide the mixture evenly among the muffin cups. Press it down gently with the back of a spoon to ensure the mixture holds together.
- Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and slightly crispy.
- Cool and Serve: Allow the muffins to cool in the tin for a few minutes before carefully removing them. Serve warm or at room temperature as a snack or side dish.
Notes
- Moisture Control: Removing excess moisture from the cauliflower rice is crucial for firm, non-soggy muffins.
- Cheese Variations: Swap cheddar for mozzarella, Parmesan, or a mix of your favorite cheeses.
- Additions: Mix in diced bell peppers, cooked bacon bits, or chopped spinach for extra flavor.
- Freezing: These muffins freeze well. Reheat directly from frozen at 350°F (175°C) for 10 minutes.
