- 4 scallions, diced
- 3 tbsp fresh dill, chopped
- 1¼ cups flour
- 1 tsp baking powder
- 1 tsp salt
- 1 cup milk
- 2 eggs, lightly beaten
- ¼ cup olive oil
- 4 oz feta cheese, crumbled
- 4 oz mozzarella cheese, shredded
- 3 tbsp pecorino cheese, grated
Instructions
1. Preheat the Oven and Prepare the Baking Dish
- Preheat your oven to 375°F (190°C).
- Lightly grease a square baking dish with olive oil or cooking spray.
2. Cook the Broccoli and Scallions
- Heat 1 teaspoon of oil in a medium skillet over medium heat.
- Add the broccoli florets and diced scallions and sauté for 5-7 minutes, until the broccoli is tender and the scallions soften.
3. Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
4. Mix the Wet Ingredients
- In a separate bowl, whisk together the milk, lightly beaten eggs, and olive oil until smooth.
5. Combine Everything
- Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Fold in the sautéed broccoli and scallions, crumbled feta cheese, shredded mozzarella, and chopped dill.
6. Assemble and Bake
- Transfer the mixture into the prepared baking dish and spread it evenly.
- Sprinkle the top with grated pecorino cheese.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
7. Cool and Serve
- Let the snack bars cool in the pan for 10 minutes before slicing.
- Cut into squares and serve warm or at room temperature.
